The A.O.C.'s mention identifies a product which authenticity is linked to its geographical origin. This mention guarantees a clear link between product and soil, which means a specific geographical area with its geological, agricultural, climatical characteristics, a specificity in the process of production and a reputation acquired a long time ago, all these protected by the name of the vintage.

The I.N.A.O. (Institut National des Appellations d'Origine) is aimed to recognise A.O.C.'s. It ensures the following and control of production, gives help and advises to the professionnals, and contributes to the defense of A.O.C.'s.

The wine-taster is a small low cup (10 to 12 cm wide) which is used to examin, to taste and to "admire" the wine. In France, during the 18th century, each province used to make its own model. This product was and is still today preferably made out of metal (silver or pewter) to reflect the colour of the wine. The wine-taster used to be first attached to the belt, then hanged by a little chain around the neck.
